Any recipe that involves pickling is a winner in my book! For Sweden’s turn in Cooking Around the World, I went with sweet and tart cucumber pickles (made the night before), mashed potatoes (whipped with homemade chicken bone broth instead of cream), lingonberry jam, and pork-and-beef mini meatballs in a savory sauce of broth, soy sauce, and scrapings from the sheetpan used to cook the meatballs.

Thoughts: Despite the mountain of ingredients, this was a super quick and easy one. The pickles acquire a perfect amount of flavor after just one night in the fridge, and the meatballs and sauce come together and cook in under 30 minutes. Boiling the potatoes prior to mashing them was by far the most time consuming step, making this (likely) the first of the Cooking Around the World meals that could be considered an easy weeknight dinner.

Mashed Potatoes: Peel and cut three russet potatoes into 2 inch pieces. Boil the potatoes in lightly salted water until soft, drain, and then rice/mash the softened pieces with a fork. Add 2 tbsp of bone broth to the mashed potato mixture at a time, stirring and adding broth until desired consistency is achieved. Salt and serve asap!
