As someone with a digestive system that unfortunately regards all forms of dairy with either skepticism (best case scenario) or complete and utter terror (worst case scenario), I was somewhat nervous when I pulled Monaco from the Country Jar. Every article and recipe I found seemed to insinuate that Monaco is basically just a France Jr. when it comes to culinary matters, and no group of chefs leans more heavily on cream, butter, milk, and cheese than les français. After scouring the internet for Monegasque recipes that weren’t absolutely drowning in lactose, I finally stumbled across the F1 Cookbook. And there, not only did I find an entire Monaco tasting menu, I found TWO recipes that were entirely dairy-free as-is (and a third that was easily adjustable). Dieu merci!





Thoughts: All three of these recipes were an absolute joy to make. The ingredient lists were sweet and simple, and the end results were fragrantly beautiful. I’ve always believed that there’s something extra delicious about meals that take seemingly unassuming ingredients (like green beans) and transform them into something decadent and memorable. The haricots verts and rosemary potato recipes felt like an elevation/celebration of these humble veggies rather than an attempt to transform them into something convoluted. And the onion tarte? Perfection.
