Interlude: To All the Countries I’ve Cooked Before

When I started this project on a whim two years ago, it didn’t cross my mind to thoroughly document what I was doing in the kitchen. I snapped a few pics of the first country (Togo) on my iPhone, threw those pictures on my Instagram story, and thought nothing of it… until the replies started pouring in. Never in a million years did I expect my friends and family to be so intrigued by this project, and when their interest was still going strong 30 countries later, it finally dawned on me to start this blog.

The fact that 30 countries and 30 dinners didn’t get the royal “good camera + blog post” treatment absolutely kills me, but I think going back and redoing those countries would likely derail the project. There’s a chance that I’ll get around to making them again at some point in the future, but for now, I think this master post is the best home for them.

And so without further ado, I present to you: All the Countries I’ve Cooked Before

Togo: gboma dessi

Lithuania: koldunai

Puerto Rico: sancocho

New Zealand: mixed root vegetables and rack of lamb

Tonga: ota ikha and otai

Madagascar: malagasy romazava

Nicaragua: carne asada and gallo pinto

Ireland: Guiness stew (not pictured), Irish soda bread, and Guinness chocolate cake (not pictured)

Scotland: ham hock stew

Spain: paella

Senegal: thieboudienne

Japan: miso soup, yaki onigiri, chicken gizzard yakitori

Dominica: callaloo

Chad: karkanji, beef with peanut sauce

Cuba: arroz con pollo, mojitos

Thailand: tom kha, chicken pad thai

Gabon: bananes au Four Croustillantes

France: beef bourguignon

Wales: cawl

Morocco: tagine and chickpea flatbread (no pics taken :/ )

Moldova: sarmale

England: fish and chips

Russia: caviar and accoutrements

Republic of the Congo: poulet a moambe

St. Lucia: pork tail bouillon

Peru: sweet potato ceviche

Nauru: coconut crusted cod

China: scallion pancakes, ganchao niuhe
